Greg's birthday

Today is Greg's birthday. I feel a little bad because I know how much everyone adores Greg and I think his birthday was less than exciting. I wondered... do I try too hard to make sure everything is perfect and if not, then I think I give up. So anyway... he got a new outfit, boat shoes (navy sperrys, I really liked them) and we went out to a great dinner. Topped the night off with fried oreos and two very delicious mixed concoctions - one bourbon for me, and one rye for him. Greg ended up spilling half of his on his new shirt and jeans and I'll admit I didn't really want to share mine with him, but since it was his birthday, I let him have some. He decided he wanted homemade salted caramel ice cream and beignets for his birthday treat. Derek was not happy. Derek woke up Greg and asked him what we could make for him and when all Greg wanted was an extra hour of sleep - Derek wanted to know what kind of cake he wanted (I think he gets that from me). So... I'm off to make some salted caramel ice cream... wish me luck!

Summer

Let's keep our blog going, ladies! I love you all and I would love to read more posts from everyone. Some ideas.......vacation plans for this summer?.......any one-day kids outing ideas?..........favorite books (Amy-I still haven't started the 50 Shades of Gray)

Personally, I will be working and doing clinical a lot this summer. Two weeks from today, Teddy will be leaving for 1 week Church Camp six hours away! We are doing our traditional Pepin Vacation this year over 4th of July. Other than that, we have a week August 7th-August 14th that we aren't sure what we will be doing. What about you?

Work Contest: Your Cooking Connection

There was a contest at work to submit a 250-word essay on what cooking means to you. I thought I would share what I submitted.....

I love to cook and cook to express my love.

Growing up, my kitchen role models were the men in my life: grandfathers, uncles, my father. While some of these men had trouble expressing their feelings, I have come to realize that there expression of love was in the many meals they prepared for their spouses, children and grandchildren. As a busy employee, wife, and mom of young kids, one of the ways that I nurture myself is to sit at their table, as a guest in their kitchen.

One other way I nurture myself is to invite friends and family to sit at my table. I love to plan the meal, puruising through the many cookbooks I have collected throughout my life’s travels. I love to spend time at the grocery store grateful that I have been blessed enough to buy the necessary, sometimes indulgent ingrediants. I love to spend the afternoon prepping so that when my company arrives I’m able to spend time with them instead of the inside of my kitchen. Most importantly, I love to sit at the table with good food, good wine and even better conversation. This is the place that I am both able to express my love and feel love.

As a mother to young children, I am trying to teach them to express themselves with words, This is especially true for my son. But I know if that fails, it will be okay. I’m also teaching them to cook.

Christmas Pictures




So I am very thankful that I have started stressing less about the small things. A few examples - I used 'very' instead of truly in the first sentence of this post because I'm never really sure how to spell truly and don't want to look like an idiot. A new motto - never use big words when little ones will do! Second, I love this picture! We randomly went to the mall to return a pair of shoes (by the way - if you don't bring the box, they won't return the shoes even if you have the invoice). Derek saw Santa and we waited in line for almost an hour. The twins were hyperventilating they were so tired and you can still see traces of Derek's chocolate milk around his mouth. Finally, we were next in line, and, of course, Derek had to go pee-pee. As I'm standing with the twins screaming and Greg is booking it with D to the closest bathroom - Santa's helper came to sing and dance to the boys and they both started laughing! Greg made it back just as I was getting the twins out of their stroller and into Santa's lap. The picture tells it all - but the best part was the advice Santa's elf shared with me - the pictures with the scared, miserable, crying kids are the ones you appreciate most in the end. So -- I'm going to keep this imperfect photo and submit it to any contest I find - this sums up what happens when you stress less, go with the flow a little more - and embrace the moments where if you don't laugh a little, you may just cry!

Sweet Potato Waffels




Ok, so I'm starting with the first post on my way to getting our cookbook off the ground.

After our Thanksgiving meal, I had a few sweet potatoes left over, so I decided to try to use them up by making Sweet Potato Waffles - thanks to Alton Brown.

I obviously didn't need to cook the sweet potatoes since they were done from the meal. I may have had more than the 1 1/2 cups of sweet potatoes because I used almost twice the amount of milk called for - plus I added cinnamon and vanilla.

I also served them with the Orange Molasses Butter that I had left over from dinner.

I think the kids enjoyed them!!!
